tasting notes for current roast profiles

CAREFULLY CHOSEN FROM THE FINEST COFFEE GROWING REGIONS, Little Scratch Coffee beans match THE PERSONALITY OF OUR flavor PROFILEs. WE find great coffee FROM CONSCIENTIOUS GROWERS. THEN WE ROAST THE BEANS TO THEIR PEAK LEVEL. WE’RE AIMING FOR BALANCE HERE, FOLKS!

Origin: Colombia

Howdy to Iowa, or ( wherever YOU are) from beautiful Colombia, where there are mountain ranges that provide higher altitudes and ideal climates for cultivating coffee. Colombia is the third largest exporter of coffee in the world.

The volcanic soil and mid-level elevation of this washed Howdy, IA gives us harmonious fruit notes - Fuji Apple & raisin; a gorgeous hibiscus floral complexity; and a nutty finish best described as peanut buttery.

origin: ethiopia

This coffee comes from the Oromia region of Ethiopia, the largest state in the birthplace of coffee. Nitisols and high elevation give us a dense bean with complexity that holds up against higher temperatures.

Flavor-wise, this Stoic Farmer is our dark roast offering, boasting nuanced flavors that invite pairing with milk, but also sipping straight black. Melon & lemon zest notes get toned down and balanced with earthy, honey undertones.

ORIGIN: brazil

From the Mogiana region of Brazil, this lower altitude coffee is the same coffee we have previously featured on Earth Signs, but double processed to have the caffeine removed.

Decaffeinated for later in the day consumption or for those forgoing caffeine, this full city medium-to-dark roast will please your palate with notes of almond & toffee combined with cocoa and a clean, full-bodied effect.

Origin: brazil

Earth Signs is a natural process coffee from Fazenda Dutra in the Minas Gerais region of Brazil. Tucked in between rolling hills and uneven terrain are small to medium farms (by Brazilian standards) managed by the Dutra family - specialty growers with high sustainability standards.

This medium roast, a nut-forward beauty with orange zest fruity brightness is brown sugar sweet with a smooth finish and a caramelized, light body.

ORIGIN: bali

This one comes to us from the Kintamani Highlands of Central Bali, Indonesia in the Ring of Fire. This group of South Pacific islands boasts tropical lush jungles atop rich volcanic soil.

This wet-hulled, organic certified Pinhook Premium is roasted medium. It has a bright, delicious fruit notes - grapefruit & raspberry, with butterscotch sweet and herbal complexity. A dusty cocoa finish will keep you coming back for sip after sip.
